PUMPKIN STUFFED WITH MEATBOLLS

INGREDIENTS

  • 1 Package of meatbolls Unión Ganadera
  • 1 medium pumpkin
  • 150gr. Bacon
  • 300gr. Creamy corn
  • 150gr. Onion
  • 85gr. Green onion
  • 20gr. Parsley
  • 80gr. Grated cheese
  • Salt c/n
  • Pepper c/n
  • Oregano c/n
  • Olive oil c/n

STEPS

01. Preheat the oven to 180°C.
02. Wash and cut the pumpkin lengthwise. Remove the seeds.
03. Place face down on the baking sheet and bake for 15' while making the filling.
04. In a frying pan, place olive oil and brown the pulpetas. Set aside.
05. In the same frying pan, brown the bacon cubes, together with the chopped onion and green onion. Add the creamy corn, chopped parsley and oregano.
06. Once the pumpkin is tender, remove part of its pulp and mix with the previous preparation.
07. Fill the pumpkin with cooked pulpetas, the mixture and finish with pulpetas on top. Place grated cheese for gratin.
08. Bake at 200°C for 15' and serve.
